The only purple fingerling, Potato Purple Peruvian features rich, dark purple skins and vibrant purple flesh. The medium to large finger sized and shaped tubers need really rich soil and lots of water to flourish. Always a favorite at farmers markets! Be sure to add a dash of vinegar when cooking to retain the vivid coloring when cooked. The skin is fine and very thin - rarely peeled for cooking and eating.
