Seen this fun item at a farmer's market (where it always sells out) or watched a cooking show where it's being used? Fun stuff! Actually a large member of the leek family rather than the garlic clan, elephant garlic produces heads and cloves much bigger than standard garlic but they impart a less pungent flavor. If you like garlic taste, but in moderation, try this. Especially good in recipes with raw ingredients, where the mild, complex taste can be appreciated - think salsas and pesto. Plant grows with broad, flat foliage like a leek and develops tall flower stalks. Heads can weigh about a half pund each.
