Used widely in Caribbean and Asian dishes, especially Thai curries, the clean citrus flavor of lemon grass mixes well with garlic, cilantro and chilies. Both the stalks and the blades are used in cooking and cut stalks may be frozen or kept in the refrigerator for up to 3 weeks.
